What travels
Chili, pulled pork, wings and sliders. All four are better made the day before, which is the actual reason they are tailgate food — the cooking happens at home, not in a parking lot.
Chili in particular is a different and better dish on day two. Make it, cool it, reheat it there.
What does not
Anything fried that needs to stay crisp, anything dressed in advance, and anything requiring a plate and a fork. Nachos assembled at home arrive as a single soft mass — take the components and build them there.
Quantities for twenty-five
Wings: 14 lb. Sliders: 8 lb of ground beef and 60 slider buns. Chili: 7 lb of ground beef and 10 cans of diced tomatoes. Tortilla chips: three bags. Drinks: three a head. Ice: four and a half pounds a head, because it is outdoors — twelve 10 lb bags.
Two coolers, not one: drinks in the one that gets opened constantly, food in the one that stays shut.
Team colors, not team marks
Color is free to use and instantly legible. Logos and team crests are licensed, so anything printed should carry the palette rather than the mark — which is also the version that photographs better.
